What Is Cold Break Tomato Paste? A Guide to the CB Production Process

Pizza

When sourcing tomato paste for your business, you may come across the term “Cold Break” (CB). But what does it mean, and how does it affect the final product?

At Taichy Food, we produce both Cold Break and Hot Break tomato paste, depending on the specific needs of our global clients. In this article, we’ll explain what Cold Break tomato paste is, how it’s made, and why it’s the preferred choice for many food manufacturers.

✅ What Is Cold Break Tomato Paste?

Cold Break (CB) refers to a specific method used during the tomato paste production process. In Cold Break processing, fresh tomatoes are heated to a lower temperature—typically around 65–75°C (149–167°F)—just after being crushed. This lower heat helps preserve certain natural characteristics of the tomatoes.

🏭 How Is Cold Break Tomato Paste Made?

Here’s a simplified version of the CB process:

  1. Selection and Washing
Fresh, ripe tomatoes are carefully selected and thoroughly cleaned.
  2. Crushing and Pre-Heating
Tomatoes are crushed and quickly heated to 65–75°C to deactivate enzymes without destroying texture and color.
  3. Pulp Separation
The juice and pulp are separated from skins and seeds using industrial sieves.
  4. Evaporation
The pulp is then concentrated under vacuum conditions to reach the desired Brix level (typically 28–30% or 30–32%).
  5. Sterilization and Packaging
The concentrate is sterilized and packed—commonly into 220L drums or cans, depending on customer needs.

🧪 Features of Cold Break Tomato Paste

  • Brighter Color
CB paste tends to be brighter red than Hot Break, making it ideal for products where appearance matters.
  • Lower Viscosity
The texture is thinner, which is preferred for soups, sauces, and ketchup production.
  • Better Flavor Retention
Since it’s heated less, Cold Break paste preserves more natural tomato flavor.
  • Common Brix Levels:
    • 28–30% Brix
    • 30–32% Brix

🏆 Who Should Use Cold Break Tomato Paste?

Cold Break paste is most commonly used by:

  • Sauce manufacturers
  • Soup producers
  • Ketchup and tomato-based condiment makers
  • Food service providers needing thinner consistency

If your product relies on bright color, fresh flavor, and fluid consistency, CB is likely the right choice.
